Croque Monsieur et Sa Famille: A Whole Family of Parisian Grilled Cheese

Croque Monsieur is the nibble of the cafés and wine bars of France. Each establishment has its own; some versions are unfortunately pedestrian, some gloriously delicious. At its essence, croque monsieur is a ham sandwich that is broiled, then topped with cheese (grated cheese gives a nice crisp and lacey edge to the cheese topping). A decade or two back, it was always topped with béchamel sauce before the cheese, and sometimes it was all dipped into egg and browned in the pan, a veritable ham and cheese–stuffed French toast. These days the sandwiches vary wildly from café to café.

All you need with any croque, whether it is monsieur, compagnarde, madame, etc., is a fresh-leafed crisp little salad alongside, such as the Paris Café Salad of greens and beets.
